Recipe idea for cooking with fresh herbs:
Basil Butter (Stir into hot pasta or polenta, or melt over grilled meats or corn)
- 1/2 cup unsalted butter, softened at room temperature
- 1/2 cup finely chopped fresh basil leaves
- 1tsp minced garlic
- 1/2t freshly grated lemon zest
- Kosher salt
- Ground white pepper
In a bowl, combine the butter, basil, garlic, lemon zest, 1/2t salt and 1/2t white pepper and mash with a spoon until well combined.
Use immediately as a spread for corn on the cob, grilled vegetables, or dinner rolls. Or use plastic wrap to shape the basil butter into a log, tightenig the ends. Refrigerate until very firm. Slice into 1/4inch thick coins and melt over just-off-the-grill chicken, pork, fish fillets or vegetables. The butter will keep in the refrigerator for up to 2 weeks or in the freezer for up to 1 month.
